I love me some pork. Pork in any flavor or type. Chops, bacon, ham, sausage…whatever. It’s the bomb and pigs are the best. I also love to mix some heat with some sweet, I think with so many dishes it makes for something really different and interesting. So, what better way to test out that theory than to throw some sweet heat on some awesome pork goodness?
Ok, here are the ingredients.
- 2-4 Jalapenos
- 10 oz. Polaner Cherry All Fruit
- 1 teas. Brown Sugar
- 2 Tbsp. Water
- 4 Thick Cut Pork Chops, 1-1 ½ inch thick
- Sea or Kosher Salt
- Freshly Groud Black Pepper
Of course, you can swap Jalapenos for anything type of spicy pepper you are good with (Habanero, Pepperocini, etc). Same with the jelly…All Fruit is good, but there are so many good options. I am a big supporter of getting the best quality meat you can get, along with good salt (sea or koser) and freshly ground pepper. I think it makes a real difference. Now, on to the fun.
Instructions:
- Preheat grill to medium/medium high heat. Oil the grates.
- Cut the stem end off of the Jalapenos and cut in half lengthwise. Remove the seeds and ribs unless you want more heat, then leave all or some of them. Start with two and add additional until you reach your desired heat level.
- Place the Jalapenos, Cherry spread, Brown sugar and water into a blender and puree.
- Put the puree in a small sauce pan and bring to a simmer stirring occasionally. Simmer 3-5 minutes then remove from heat and divide. Use 1/3 for glazing the chops and the remaining 2/3 to serve on the side.
- Season the Chops with Salt and Pepper. Depending on thickness of the Chops grill 3-5 minutes per side over direct heat. Instant read thermometer should read 120-130˚.
- Glaze the Chops and move to indirect heat. Turning and glazing after 3-5 minutes. Cook until instant read thermometer reads 150-155˚ and remove to plate and cover with foil.
- Let rest 10 minutes.
- Serve immediately with some extra sauce on the side.
