Have I mentioned how much I love pork? If you know me, then you know that this is just so very true. Pork is just amazing food. The versatility, flavor, and just pure awesomeness of it is almost too much to understand. That’s why I’m so pleased to be partnering with Smithfield Prime Fresh Pork on this post. A Twist on Your Typical Dish
Ok, so now we are on the same page, I hope. The cool thing about my beloved pork is that aside from being versatile, it’s also pretty darn delicious. I guess the two qualities go hand-in-hand, really. You almost can’t have one without the other. The really cool thing is that you can put a twist on a classic, traditional dish. Simply swap out all of the same-old chicken or beef with some delicious, high-quality, all-natural fresh pork for a new, flavorful twist on classic dishes. Think tacos, roasts, and even egg scrambles. It makes for some flavorful and satisfying meals every night or on special nights! Make the holidays a little more spicy, or just make Tuesday night at home more spicy!! Why not??
While I really love to make (and eat) pork in so many ways, one of my favorites right now has to be with eggs. Egg Scramble to be exact. This is a great pair and really good for breakfast, lunch, or dinner. The flavor of the pork is perfect for the richness of eggs, especially when there is ample cheese and plenty of veggies involved. It’s just a really filling and satisfying meal that I seem to go to more and more. Let me share my Cheesy Egg & Fresh Pork Scramble recipe with you right now to show you what I mean!!
Cheesy Egg & Fresh Pork Scramble
When talking about pork and eggs, there are just so many ways to do it – Smithfield bacon, ham, and sausage are all so common and work really well. But I also love to shake it up. Often times, I really love to mix in some Smithfield Prime Fresh Pork with my eggs. It really gives it a great flavor and adds texture to the dish. Plus, if you cut the pork loin into smaller slices or cubes, you can save so much time in the kitchen – which is a great tip for busy weeknights or last-minute holiday gatherings.
When I’m looking for fresh pork, Smithfield Primeis my go-to for any style of dish, because it’s high-quality, all-natural and versatile. When you start with a premium cut of meat, you don’t have to do too much to make a restaurant-quality meal, so it’s especially great during the holiday season!!
This dish is perfect for a special-occasion breakfasts, everyday meals, or holiday brunch!! This easy egg scramble is warm and hearty, with potatoes, fresh pork, cheese and sweet red and green peppers, and more. You can pick and choose what ingredients you’d like to put in it, and serve it for a casual supper, too. It’s all about you and how you want to enjoy!

Cheesy Egg & Fresh Pork Scramble Recipe
- 6 oz Smithfield Prime Boneless Fresh Pork Loin sliced/cubed
- 1 cup cups diced red potatoes
- 1/4 cup chopped sweet red pepper
- 1/4 cup chopped sweet orange or yellow pepper
- 1/4 cup chopped onion
- 1/4 cup chopped green onion (scallion)
- 4 teaspoons extra virgin olive oil
- 8 large organic free-range eggs
- 1/3 cup sour cream
- 1/4 cup 2% organic milk
- 2 teaspoons sea salt
- 2 teaspoons fresh black pepper
- 1/4 teaspoon freshly grated garlic
- 2 cups shredded cheddar cheese NY extra sharp NY extra sharp
Gather your ingredients.
Place potatoes in a small saucepan and cover with water. Bring to a boil over high heat. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain.
Chop, cube, and slice the ingredients to your liking.
In a large skillet, saute the peppers, garlic, and both types of onion in 2 teaspoons oil until tender. Sprinkle in salt and pepper.
Add half of the Smithfield Prime Fresh Pork and potatoes; saute 7-10 minutes longer.
Meanwhile, combine the eggs, sour cream, and milk. You can use a blender or whisk. I like to make sure it's very light and bubbly. The more air incorporated, the lighter the eggs.
Pour half of the egg mixture over vegetable mixture; cook and stir over medium heat until eggs are completely set. Mix mixture.
Sprinkle with 1 cup cheese. Repeat with remaining ingredients.
Add some more fresh black pepper and green onion. I even like a little hot sauce! Enjoy with fresh bread!!!
