Easter Bunny Cupcakes

We are a week into March and Easter is coming up fast. Yes, I know, it’s about 10 degrees in NY right now, but it’s true. With most holidays, it’s always nice to get festive and to bring some joy into the house with a sweet treat. Natalie and the kids love to help out, so not only do we rock out with some sweet treats, we have a lot of fun and spend some essential family time together. It’s a perfect pairing and everyone wins on a number of levels.

So, with that in mind, how about some awesome Easter Bunny Cupcakes?! Very easy and very awesome. Let’s get to it.

Cupcakes

What You Will Need:

  • 2 C sugar
  • 1 3/4 C flour
  • 3/4 C cocoa
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 eggs, room temp
  • 1 C whole milk, room temp
  • 1/2 C canola
  • 2 tsp vanilla
  • 1 C boiling water

What You Will Need To Do:

  1. Preheat oven to 350 degrees.
  2. Line cupcake tins with paper liners.
  3. Whisk the sugar, flour, cocoa, baking powder, baking soda and salt in a mixing bowl.
  4. Combine the eggs, milk, oil and vanilla in a bowl.
  5. Add this to the dry ingredients beating on medium until the batter is smooth.
  6. Gradually add the boiling water, milk and oil and blend together until the batter is smooth.
  7. Using a medium scoop fill the paper lined cupcake tins with the prepared batter.
  8. Bake at 350 degrees for 20-25 minutes until an inserted toothpick comes out clean.
  9. Allow to slightly cool before transferring to wire racks.

Frosting

What You Will Need:

  • 1 C unsalted sweet cream butter, softened
  • 3 C + 1/2 C powder sugar
  • 2 tsp vanilla
  • 3-5 TBSP heavy whipping cream.
  • gummy bunny ears
  • edible eyes
  • pink gel frosting
  • black gel frosting

Here’s What You Will Need To Do:

  1. Beat powder sugar, butter and vanilla in a bowl.
  2. Add in the heavy whipping cream and continue to mix until stiff peaks form
  3. Scoop the frosting into a pastry bag with a large round tip.
  4. Twist the open end of the pastry bag to push the frosting to the tip.
  5. Starting around the edge pipe a circle and pipe it in to the center creating a peak.
  6. Set aside.

Here’s What You Will Need To Do To Decorate:

  1. Place the bunny ears on the top of the cupcake.
  2. Add two eyes.
  3. Using the pink frosting, add a nose.
  4. Using the black frosting add the mouth and whiskers.

Makes 24 cupcakes.

Well, what do you think? It’s a pretty great way to do something fun for or with the kids for Easter. They are pretty delicious, of course, as well. How can you go wrong with that?
