I’ve had the pleasure to trying a wide range of products from Perdue Farms and it’s brands like Niman Ranch and Coleman Natural. It’s just always good quality, delicious meat at a great value. I really love the service. It’s been awesome, especially during all of the uncertainty of 2020. One of my favorite selections so far has to be the Niman Ranch St. Louis Ribs.

St Louis style ribs on the grill are amazing, especially when cooked low and slow on the BBQ! Right at the end, you can turn up the heat and get a nice little char for some amazing crispiness and flavor. I love it, especially when I cook up those babies with some delicious dry rub seasoning. Yes, you can cook the ribs in a wet sauce, or even with no sauce, and it would also be great. But I really enjoy getting a flavorful, balanced dry rub on those ribs.

The mix I used was a little unique, but so great with the tender, delicious smoky taste of these Niman Ranch ribs. Combine brown sugar, sea salt, sugar, garlic and onion powder, paprika, and coffee for the rub. I also added a little olive oil as a base coating. I love the mix of spice, salt and sweetness…but the bitterness of the coffee really makes this one pop! The sugar melts nicely, too. It really comes together nicely.

Plus, these ribs are really amazing. 2.6 pounds with more meat on the bones than traditional baby back ribs. These babies will really feed the family and then some. Plus, if you know Niman, you know that it’s just about the best meat you can find. Probably has a lot to do with how everything is raised with amazing care and certified humane. When you treat the animals well, the results speak for themselves.

Amazing Burgers

Those amazing ribs isn’t all I’ve been grilling up so far this June! In the same awesome meal, I was also cooking up some absolutely delicious Niman Ranch 80/20 Ground Beef!

As far as the burgers are concerned, the 80/20 blend is the perfect ratio of lean to fat for a juicy and great textured “melt-in-your-mouth” burger. Plus, the meat just really has a wonderfully, flavorful taste and texture that a lot of lesser meats just don’t seem to offer. And I’ve grilled a ton of burgers in my life so far.

I typically stick with the basics…but I always make sure I coat the burger in plenty of salt and pepper. To me, this is the key to beef of any kind, cooked in any way. It just makes it better. I’ve been cutting the burgers in half, stuffing them with shredded or cubed cheddar cheese, and they putting it back together (sealing around the edges) to really have some awesome, gooey cheeseburgers, too. Potato rolls with seeds, fancy artisan bread and rolls, or really any kind of bun works well, too. You just cannot go wrong with a good burger. Cannot.

Grilled Chicken Thighs

My daughter is a chicken lover…but the whole family loves it, too. I have to say, they particularly love the way I grill chicken, especially Perdue Boneless Skinless Chicken Thighs and Chicken Thigh Filets. Grilling brings out the best flavor of chicken thighs, which retain more moisture than boneless breasts when grilled.

I love cooking chicken on the grill and when I do, I normally cook chicken the same way. First, add plenty of salt, pepper, and Italian seasoning (at least oregano) on one side. Flip pretty quickly then baste the other side with plenty of olive oil. Let it sit a few seconds, then add the salt, pepper, and Italian seasoning on that side, too. Once that side it getting a little brown, flip the chicken and reapply olive oil, salt, pepper, and Italian seasoning. Make sure the bottom side is nice a brown before you flip once again. Finish off with more and the same. Ample seasoning and char is important, but I think consistent olive oil is the key to tasty, juicy grilled chicken. Once I take it off the grill, I hit it with the juice of a lemon to finish it.

I love the 3-pound package, split into 1-pound portions. Sometimes I use 1 pound, sometimes 2, and sometimes 3. It’s an ideal setup and it makes the chicken last longer.  You can always add more as needed since boneless skinless thighs cook quickly from thawed.

More Amazing Meat

There are more great meats to check out, too. There’s so many options to mix up your grilling sessions this summer, I love it. Variety is the spice of life and all that, right? I would definitely check out the  Perdue Whole Chicken! The meat on the bone always makes for good eating. Try out some Beer Can Chicken or Spatchcock. Plus, you get over 16 (4-oz.) servings of meat per bird to feed the family and many more! It’s party time, baby!! And who doesn’t love to see that whole bird, all grilled up, ready to be carved? I’d say no one, that’s who.

If you are in the mood for something different, I highly recommend the Niman Ranch Lamb Loin Chop, which is perfect for grilling, with that awesome “T-bone” look. Always a hit, man, always a hit. Unlike most other lamb (often raised in New Zealand), Niman Ranch lamb is raised by independent farmers in the USA, which I am all about. American Lamb is less gamey to me, so that’s a huge plus. This bad boy is pre-cut into 4- to 6-oz. chops for quick thawing and even cooking. Awesome stuff that’s a little different. I really think people will love it.

Finally, you just cannot forget the Niman Ranch Fearless Uncured Franks an Uncured Beef Franks. It’s a favorite of the kids (and the adults). You know everyone will have at least one. They are quick and easy to grill. No thought, all flavor-packed return! The Fearless Frank is a blend of Niman Ranch’s heritage pork and Angus beef. It has a smooth, mild taste that’s great for kids and adults. A BBQ must.

Grilled Veggies and Potatoes

I like to pair up all the meats with some simply grilled veggies. The best for me is corn, but also bell peppers, asparagus, and potatoes work really well. Again, simply brush on ample amounts of olive oil and splash on a good amount of salt and pepper and you are good to go. Sometimes I season the potatoes and wrap it in aluminum foil to steam it a bit…more like a baked potato. In any care, the char won the vegetables really taste great…it’s the best way to have your veggies if you ask me (and my family).
