Keto Baked Goods
While I’m going to get into the meat of the diet and how it’s so mind-bogglingly different than almost everything else, I’d like to talk about some of the easy-to-follow recipe ideas from this great book. I have some real favorites recipes, both savory and sweet. These recipes keep you in line, are easy to make, and are really good for you. Plus…they taste awesome, too.
One of the best savory dishes from this book has to be the awesome Chili Loaded Baked Potato. It’s the perfect combination of macronutrients to help stabilize blood sugar and regulate your cortisol cycle keeping your body in fat burning mode. Combining the protein, carbs, and fiber together is a perfect balance to increase energy
levels, without the normal crash associated with higher carb meals.
As far as amazing keto baked goods that hit the sweet tooth just right, I’m going to go with two great recipes. The first is the recipe for Fruit Tarts. Now these aren’t the fruit tarts we all know today that WAY too much refined sugar, grains, gluten and processed ingredients! No way, this wholesome fruit pizza is a simple dish that uses only real food ingredients, packed with good fats, protein, and more! Taste just like the mainstream ones, too.
The second recipe for awesome keto baked goods is actually a no-bake recipe! The No Bake Salted Caramel Bars are just fantastic! Packed with “friendly fats” and minimal carbs, this recipe makes for the perfect treat after dinner or even before bed.
How Always Eat After 7PM by Joel Marion is so Different
While my goals area to lose weight, gain energy, and just feel better overall. I decided to try this book mainly because it was very contradictory to the established norms of “carbs bad” and “late night eating bad.” We’ve been traditionally taught to avoid carbs, have an early dinner, and never eat before bed. But the fact is, the latest scientific research shows us this earlier model is not the most ideal.
The most challenging times to curb hunger are just before bed and in the morning. By following the Always Eat After 7PM program, you have the most willpower to stay on the diet because you are eating during the hours when you are most hungry. This also puts you into both intermittent fasting increasing testosterone and your metabolism, while putting you into ketosis.

I mean, if someone is telling that carbs are good, keto baked goods are good, and that late night snacks are good, too…then I’m all ears, baby! Well, let me drop some mind bombs on, directly from this amazing book!
Did you know that “Having carbs in the evening is also a great weight loss strategy?” According to the book:
- When you’re active, your body burns mainly carbohydrates and muscle glycogen for energy. By eating carbs at night, you allow your body to use them to restore glycogen for energy the next day and provide your body with the glucose it needs to regulate your blood sugar levels during sleep.”
So, what about not eating carbs and, basically, starving yourself with too few calories per day? That has to work, right? Well, according to Joel Marion:
- Avoiding carbohydrates and restricting calories later in the day can have an adverse effect on your thyroid hormones, which play a major role in metabolism. When the thyroid fails to secrete enough of the hormones that control metabolism, this can trigger symptoms like fatigue, depression, weight gain, thinning hair, and dry skin.
Ok, so all of this is getting a little bit too crazy for me. This is like bizarro world! Everything Joel is telling me is pretty much the exact opposite of what I’ve been told for so many years. Well, pretty much…
- So, despite all the bad press over the years, certain carbohydrates play an important role in balancing your hormones and regulating your metabolic rate, while avoiding the dreaded weight loss plateaus that accompany conventional mainstream diets. Furthermore, when you eat these carbohydrates, you’ll feel much better than you would if you were following a traditional diet.
Ok, so carbs are good for you. Check. Also, eating calories and carbs late at night, even right before bed, is good for you. Double check. I know, it’s difficult to process, but it’s been really awesome since I started this journey. It’s just a really easy, more natural way to eat and to live. It’s been so easy to take this all and run with it. And I think the results are there…with much more to come.

This is an insightful post. I barely gain weight but I did gain during the quarantine. Working from home and eating while binge-watching shows on Netflix was not a good idea LOL. I’m doing my best to exercise and eat right. This post is super helpful. I LOVE those little fruit cups. They look delicious.
These recipes sound really good. I love that I can have something delicious (and something at night!) that won’t derail my healthy lifestyle.
